I went with light eater just because I figured it'd be fewer distractions, but as a result I've found I have to overeat anyway to maintain calories. It can be rather annoying having a character only stressing out any time you go into a tight. This can be an issue though if do get surprised by an enemy (which can happen often in Project Zomboid), but as long as you are a stealthy player you should be fine with Thin-Skinned! Grinding out strength and fitness is such a chore and almost impossible at the higher levels so Ill at least take either Strong or Athletic, if not both.
